It feels weird to blog about this soup because I've never really had a recipe for it; it's just one of those delicious, healthy, filling, throw-together soups I've always made. I really like to make it on Sunday and eat it for lunch all week.
Feel free to substitute what you have in your pantry. It's a very adaptable soup. Sometimes I add potatoes and corn, sometimes I leave them out. This time I used a wild and brown rice mix (which is my favorite) but you can use just brown rice, or whole wheat pasta.
Spicy Hamburger Soup
1 lb hamburger
1 onion, chopped
freshly ground sea salt & black pepper
1 T ground cumin
1 tsp garlic powder
1 onion, chopped
1 14.5 oz can diced tomatoes
1 10 oz can diced tomatoes with habaneros (Rotel) If you don't like it as spicy, get the diced tomatoes with green chiles instead.
1 15 oz can black beans
1 cup baby carrots (cut in half if you like, I just leave them whole)
5 cups chicken or beef broth
1 cup wild & brown rice blend
Brown hamburger and onion together and season with salt, pepper, cumin and garlic powder. Put everything in a large soup pot and bring to a boil. Cover and reduce heat to a simmer; simmer for one hour.
